The Age of Wet-Aged Beef

What is Wet-Aged Beef?

Wet-Aged beef is beef that has been aged in a vacuum sealed bag to retain its moisture. This process enhances the beef when it's natural enzymes, Lactic Acid, break down the connective tissue in the muscle, which leads to a more tender beef product.

This product is the most popular way of aging beef in Australia and the rest world. Wet-Aging is popular because it takes less time and none of the beef is lost in the process which in turn keeps costs down for the consumer.

The only main thing that one could see different from a regular steak to a Wet-Aged steak is there is less bloom (bright red colour) that emulates from the Wet-Aged steaks - but the taste and tenderness make up for that.

Here at Onlinemeats we hand pick only the best joints of beef to Wet-Age; we don't waste time with just any ol joint of beef.

Steaks that we will be Wet-Aging:

All steaks will be aged between a minimum of 28 days and a maximum of 35 days.
